The Best Oxtail Stew | AVARESE KITCHEN


Ingredients List

1Kg Oxtail
Cooking Oil
2 Tablespoons Sugar
1 Onion
2 Garlic Cloves
Mixed Bell Peppers
1 teaspoon All purpose Seasoning
2 teaspoons Curry powder
1 teaspoon Chilli Flakes
1 teaspoon Tomato Ketchup
1/2 can Tomatoes
1/4 cup Red wine
1 cup Chicken Stock
3 cups Water in between cooking

Cooking Time – 4 hours

1. Heat some oil in a pot; add the sugar and allow it to caramelise (careful not to burn)
2. Add oxtail and fry until golden brown
3. Add the onion and fry until soft; season to taste with salt
4. Stir in the garlic cloves and bell peppers
5. Add all the spices and allow to cook for 2 minutes
6. Stir in the ketchup
7. Add the tomatoes and allow them to cook for 2-3 minutes
8. Pour in the red wine and chicken stock
9. Lower heat and leave to slow cook up to 4 hours (adding water in between cooking)
