My African inspired beef stew is the heartiest, most flavor loaded beef stew recipe I’ve ever had. The choice of aged (wet aged), corn fed, well marbled beef elevates this beef stew recipe! The beef literally melts in your mouth due to the braising technique which also deepens all the the flavors in the stew.
Please enjoy this hearty stew with rice, quinoa, yam, potatoes, pasta, etc.
3 pounds aged (wet aged), well marbled, corn fed beef (cut into bite size pieces) chuck roast cut.
1 tablespoon crushed black pepper
Salt to season
Olive oil (1 cup total) about 3 tablespoons for searing
4 big red onions
6 cloves garlic (3 for searing, 3 for blend)
5 g ginger
2 Fresno chili
3 sprigs of fresh thyme
1 cup of tomato paste
3 Roma tomatoes chopped
1 tablespoon of dry rosemary
1/2 tablespoon of white pepper (not captured in video)
1/2 tablespoon of curry powder (not captured in video)
2 tablespoons of shrimp powder
2 tablespoons of virgin coconut oil
2 green bell peppers
2 1/2 cups beef stock/broth
