3-Ingredient Microwave Cheesecake
½ – 1 pack Lemon Creams (Depending on the size of your dish)
1 kg plain double cream yogurt
1 can Nestlé Condensed Milk, well shaken before opening
1 cup mixed fresh berries: blue berries and strawberries
For the Base:
1. Pop the lemon creams into a zip lock bag, crush using a rolling pin.
2. Grease a medium sized square microwave safe bowl, add the crushed lemon creams. Microwave for 30-45 seconds. Mix the crumbs together well then with the back of a spoon, press the crumb down onto the base of the dish firmly to create your crust.
For the Filling:
1. Mix the yogurt and Nestlé Condensed Milk together in a bowl. Microwave the filling for 2-3 minutes. Remove the bowl, mix rapidly and put back in the microwave for another 2-3 minutes. Pour the mixture over the lemon cream biscuit base and refrigerate for a minimum of 4 hours or overnight for best results.
1. Once the cheesecake has set completely, slice into squares and serve with fresh berries and mint leaves to garnish.
