South African Barbeque Chicken Recipe –
Piri-Piri / Peri-Peri Chicken Recipe

Chicken Peri Peri (or Piri Piri) is a South African Barbeque Chicken recipe that the Portuguese introduced. I will teach you how to make this yummy recipe in an easy way, which you can either Barbeque or roast. It could be served with fries, rice or salad.

Below is the recipe.

1. Whole chicken
2. 1/4 cup oil
3. 1/2 cup red wine vinegar
4. 1 lemon juice -seeds out
5. 1 tbsp – smoked paprika
6. 2 red chillies (use as many as you please and it also depends on what kind of red chillies you are using)
7. 7-8 garlic cloves
8. Fresh lemon and lime zest
9. 1 -2 sprig thyme
10. Salt to taste


Step 1 – Piri Piri / Peri Peri Sauce (marinade)

Blend above ingredients and put it aside(aside from the chicken ofcourse lol:)

Step 2
Spatchcock chicken or butterflying the chicken

1. take whole chicken (washed and dry)
2. use a good pair of kitchen shears
3. cut the tail
4. cut the backbone of the chicken
5. Then remove the breastbone or give it a little slit to flatten the chicken
6. flip the chicken over and flatten the breastbone

Step 3 – Piri Piri Chicken marinade
Marinate the chicken
1. marinate the inside of the chicken first with your hands(with gloves) or a brush
FYI- DO NOT USE bare HANDS AS IT can give you burning sensation
2. flip the chicken and marinate the other side

***marinate over night or make it right away**

Step 4
Roasting or BBQ

1. Pre-heat oven at 425 degrees Fahrenheit
2. on the stove, heat the oven ready grill skillet
3. put the chicken on the heated skillet and sear on medium heat for about 5 minutes
4. then put skillet in the oven
5. roast chicken for 40 minutes uncovered on the middle rack without opening the oven
6. once done, take the chicken out and let the it sit for 5 minutes before carving

put the chicken right on your favourite BBQ
cook till done – approx. 25 minutes on low heat!
